Homemade Apple Cider (Spiced warm Apple Juice)
Homemade Hot Apple Cider (Just Like Hocus Pocus)
If you've watched Hocus Pocus (and let's be honest, who hasn't by now?), you'll probably remember the scene where Max and Dani visit Allison's family's Halloween party. As they step inside the grand old house after trick-or-treating, Allison casually offers them a mug of hot apple cider.
Growing up in the UK, that scene always left me a little confused. Here, cider almost always means an alcoholic drink, so I couldn't understand why the children were happily sipping it! It wasn't until years later that I discovered that in the United States, apple cider is something completely different. It's a wonderfully comforting drink made from fresh apples (or cloudy apple juice), gently simmered with warming spices like cinnamon, star anise, nutmeg, and ginger until your whole kitchen smells like autumn.
The first time I made it, I completely understood why Americans look forward to apple cider season every year. It's cosy, fragrant, lightly spiced, and tastes like everything wonderful about autumn wrapped up in a mug.
Whether you're hosting a Halloween movie night, celebrating Samhain, warming up after a crisp autumn walk, or simply looking for a comforting drink on a chilly evening, this homemade apple cider is guaranteed to become a seasonal favourite.

Or
- 3–4 litres good-quality cloudy, unsweetened apple juice
Spices
- 1 cinnamon stick
- 1 star anise
- 1 tsp allspice berries
- 1 thin slice fresh ginger
- A small grating of fresh nutmeg
To Sweeten (Optional)
- Sugar
- Honey
- Maple syrup
Add your preferred sweetener to taste once the cider has finished simmering.
Method
If Using Fresh Apples
Wash and roughly slice the apples—there's no need to peel or core them.
Place them into a large stockpot and pour over enough water to cover the fruit.
Add the cinnamon stick, star anise, allspice berries, ginger, and freshly grated nutmeg.
Bring everything to a gentle simmer before reducing the heat.
Cook for around 1½ to 2 hours, or until the apples are completely soft and beginning to fall apart.
Using a potato masher, mash the softened apples directly into the liquid to release even more flavour.
Carefully strain the cider through a fine sieve, removing the apple pulp and whole spices.
Taste and sweeten with sugar, honey, or maple syrup if needed.
Serve warm.
If Using Apple Juice
Pour the cloudy apple juice into a large saucepan.
Add all of the spices and bring to a gentle simmer.
Cook for around 30 minutes, allowing the spices to infuse the juice.
Remove the spices, sweeten to taste if necessary, and serve warm.
Tips for the Best Homemade Apple Cider
- Use a mixture of sweet and tart apples for the most balanced flavour.
- Cloudy apple juice produces a richer cider than clear apple juice.
- Add slices of fresh orange while simmering for a subtle citrus note.
- For an adults-only version, add a splash of bourbon, dark rum, or spiced rum just before serving.
- Garnish each mug with a cinnamon stick, apple slice, or star anise for a beautiful presentation.
Frequently Asked Questions
What's the difference between apple cider and apple juice?
Traditional American apple cider is less filtered than apple juice and often contains pulp and sediment. It's commonly served warm with spices during autumn and winter.
Can I make this ahead of time?
Yes! Homemade apple cider keeps well in the fridge for up to four days. Simply reheat gently before serving.
Can I freeze apple cider?
Absolutely. Freeze it in airtight containers for up to three months and thaw overnight in the fridge.
Can I make it without fresh apples?
Yes. Good-quality cloudy, unsweetened apple juice makes an excellent shortcut and still produces a wonderfully spiced cider.
