Easy No Bake Biscoff Rocky Road

Ingredients

For the rocky road

  • 400g milk chocolate (I like to use a mixture of milk and dark chocolate)

  • 115g salted butter

  • 1 can condensed milk (around 400g)

  • 100g Biscoff (caramelised biscuit) spread

  • 400g Biscoff biscuits, roughly broken

  • 80g mini marshmallows

  • 100g sultanas or glace cherries

For the Biscoff chocolate topping (optional but I like doing it when I have guests as it looks pretty)

  • 250g chocolate of your choice

  • 100g condensed milk

  • 2 tbsp Biscoff spread

Method

  1. Line an 8-inch square tin or a similar-sized baking tin with baking parchment.

  2. Break the Biscoff biscuits into chunky pieces. You want a mixture of large and small pieces for the best texture.

  3. Add the chocolate, butter, condensed milk and Biscoff spread to a saucepan over a low heat. Stir gently until everything has melted into a smooth, glossy mixture.

  4. Remove the pan from the heat and allow it to cool for 2–3 minutes so it doesn't melt the marshmallows.

  5. Fold in the broken Biscoff biscuits, mini marshmallows and sultanas until everything is evenly coated.

  6. Spoon the mixture into your prepared tin and press it down firmly with the back of a spoon or an offset spatula.

  7. Place the tin in the fridge for around 20–30 minutes while you prepare the topping.

  8. Add the chocolate, condensed milk and Biscoff spread for the topping to a heatproof bowl set over a pan of barely simmering water, or melt gently in short bursts in the microwave, stirring between each burst until smooth and glossy.

  9. Pour the topping evenly over the chilled rocky road and smooth it out with the back of a spoon or an offset spatula.

  10. If you'd like, decorate with crushed Biscoff biscuits, a drizzle of melted Biscoff spread or a few whole biscuits around the edge before the topping sets.

  11. Refrigerate for at least 4 hours, or ideally overnight, until completely firm.

  12. Remove from the tin and cut into squares using a sharp knife warmed under hot water for neat slices.
