1 tbsp butter
~300g potatoes, peeled and chopped
1 onion, finely diced
1 small leek, thinly sliced and washed
1 tsp garlic granules
½ tsp dried thyme (or fresh if you prefer)
2 litres chicken stock

Step-by-Step Method
1. Sauté the mushrooms
