Ingredients
For the Beef
- 500g beef mince
- 1 tsp salt
- Freshly ground black pepper
- 1 tsp ground cinnamon
- 1 tbsp ground cumin
- 1 tsp dried oregano
- 1 tbsp annatto powder (or paprika – smoked paprika works brilliantly if you like a smoky flavour)
- 1 tbsp grated garlic
- 100ml water
- 1 x 400g can black beans, drained
- 100ml orange juice
For the Nachos
- 2 sharing bags tortilla chips
- 200g mixed grated cheese
For the Pico de Gallo
- 1 ripe tomato, diced
- 1 small red onion, finely diced
- 5–6 pickled jalapeño slices, finely chopped
- 15g fresh coriander, finely chopped
- Juice of 1 lime
- Pinch of salt
For the Guacamole
- 1 ripe avocado
- Pinch of salt
- Squeeze of lime juice
- 1 tbsp prepared pico de gallo
To Serve
- Sour cream
- Extra pico de gallo
- Guacamole
Method
Preheat your oven to 200°C.
Start by browning the beef mince in a large frying pan over a medium-high heat until nicely crisp.
Season with the salt, pepper, cinnamon, cumin, oregano and annatto powder (or paprika). Stir through the grated garlic before adding the water, black beans and orange juice.
Allow everything to simmer until most of the liquid has reduced, leaving you with a rich, flavour-packed beef mixture.
Meanwhile, prepare the pico de gallo by combining the diced tomato, red onion, jalapeños, coriander, lime juice and a pinch of salt. Give everything a good stir and leave it to sit while you prepare the rest of the dish.
To make the guacamole, mash the avocado with a pinch of salt, a squeeze of lime juice and one tablespoon of the pico de gallo. Leave it slightly chunky or make it silky smooth—it's entirely up to you.
Line a large baking tray with baking paper and spread the tortilla chips into an even layer. Spoon the seasoned beef evenly over the chips before scattering generously with the grated cheese.
Bake for around 10 minutes, or until the cheese is bubbling and beautifully melted.
