Savoury Spiced Bulgur Wheat

Ingredients

  • 2 tbsp sun-dried tomato oil (or olive oil)

  • 1 onion, finely diced

  • 50g sun-dried tomatoes, chopped

  • 2 tbsp tomato purée

  • 1 garlic clove, grated

  • 1 tsp smoked paprika

  • ½ tsp ancho (or normal) chilli powder

  • 250g bulgur wheat

  • 450ml vegetable stock

  • Salt and freshly ground black pepper, to taste

Method

  1. Heat the sun-dried tomato oil in a saucepan over a medium heat. Add the diced onion and cook for 6–8 minutes until softened and translucent.

  2. Stir in the chopped sun-dried tomatoes, tomato purée, grated garlic, smoked paprika, and ancho chilli powder. Cook for 1–2 minutes, stirring continuously, until the spices become fragrant.

  3. Add the bulgur wheat along with a generous pinch of salt and black pepper. Stir everything together and toast the bulgur for 2–3 minutes to help develop its nutty flavour.

  4. Pour in the vegetable stock, scraping the bottom of the pan to release any caramelised bits. These add plenty of extra flavour.

  5. Bring everything to the boil, then reduce the heat to low, cover with a lid, and cook gently for 10 minutes.

  6. Remove the pan from the heat and leave, still covered, for 15 minutes. This allows the bulgur wheat to finish absorbing the stock without becoming overcooked.

  7. Fluff the bulgur gently with a fork before leaving it to rest uncovered for another 5–10 minutes. Serve warm, at room temperature, or chilled.
